My daughter is visiting and I wanted to make something special for breakfast. But so far, every morning she’s been here I’ve woken up too late for breakfast, and by the time I’m up and dressed and moving around the kitchen she’s already started her day.
Today I beat her to it.
While digging around the kitchen I tried pulling things for a tasty breakfast. Unfortunately grocery shopping is on the list for today since I used the last of the eggs last night. But I did have plenty of pears, and the best thing to pair with pears is a tasty lemon yogurt fruit dip.
I used to make this dip regularly about 10 to 15 years ago when I was living in Vegas. I’d pack it up along with fruit slices and cheese and bring it to work during one of our many potlucks.
Sometimes I’d take it to my weekly Dungeons and Dragons sessions. Back then I was mixing it by hand and instead of being pretty and smooth it was a little rough looking, and lumpy.
Today I broke out the hand mixer. Sometimes I use my hand mixer for things other than shredding chicken.
Please don’t add chicken to this fruit dip.
This dip is adapted from a recipe published by Reader’s Digest in 1996. The recipe calls for sour cream and cream cheese, lime juice and lime zest, and honey. I have always made it with yogurt instead of sour cream because I feel it adds a better flavor base for fruit. And besides, I have only one of those things on hand. I used lemon yogurt because it’s what I had. If you don’t normally stock lemon or lime yogurt — my son’s favorite — you can use plain yogurt and a tablespoon of lemon curd.
A few minutes with the hand mixer to make sure everything incorporates smoothly, and this dip is ready to be served alongside sliced fruit. I like dusting my fruit with chile and lime powder, but you can leave the fruit plain if your household prefers.
And the best part is that after you’ve finished mixing the dip, the kids can lick the beaters clean.
Lemon yogurt fruit dip
- 8 ounces lemon yogurt
- 8 ounces cream cheese
- 2 tablespoons honey
Note: Can substitute lemon yogurt with plain yogurt and 1 tablespoon of lemon curd
Directions: Empty yogurt, cream cheese and honey into medium sized mixing bowl. Using a hand mixer, combine all ingredients until smooth. Serve chilled, alongside sliced fruit.
